Breakfast Cookies
I came up with this recipe as a way to help with hectic mornings. I had a vision of a "breakfast cookie" that my children would love. Something that had enough wholesome ingredients that I could feel good about giving it to them. These freeze well. Just fill a ziplock bag with cooled cookies and pop them in the freezer. Pull out the night before and serve with a glass of milk.
Feel free to adjust the ingredients. Fresh ground wheat works well. You can add more nuts and seeds and use less sugar. Think of this as the foundation of the cookie and make any adjustments you see fit.
I make these cookies large and serve with a glass of milk.
Breakfast Cookies:
Cream 1 cup butter
1 1/2 cup peanut butter (I like Adam's- no sugar)
2 cups sugar (white or brown)
add 4 eggs
1 Tablespoon vanilla
3/4 cup milk
combine seperately
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
4 cups oats
3/4 cup sunflower seeds
combine wet and dry ingredients. Mix very well. Spoon onto cookie sheet. These have more of a cake texture and will not spread out much during baking. I like to make them big, since they are breakfast cookies.
Bake at 350 for 12 minutes, or until done.
Stand back and enjoy your children's astonished looks as you serve milk cookies for breakfast!

Thanks for the reminder! We love your recipe and need to make these again. We like to add a few mini chocolate chips... not as healthy, but you gotta love the chocolate and peanut butter flavors together!

Great recipe Renee! I made the cookie dough up last night and baked them this morning so they'd be warm. I served them with apple slices and vanilla yogurt. Everyone loved them! Thanks for posting the recipe - I did add 1 T. cinnamon since we all really like cinnamon and it's good for digestion/blood sugar. Mmmm Mmmm.... Will definitely make these again.

I'm trying these out tonight. I added some toasted almonds and chocolate chips too. I'm very excited to try them. There are many mornings I wish I had a little something to fill my stomach. So this is perfect!

I made these last night and we loved them. It made a lot of cookies. I have about 6 bags of them in my freezer. We put walnuts in them instead of sunflower seeds because my husband hates sunflower seeds (got sick from eating too many as a kid). They took about 16 minutes to cook in my oven though.

We love this recipe. I made it this morning, as a matter of fact. I use only one cup white flour, and the rest whole wheat pastry flour. I leave out the sunflower seeds (adding more oats to make up for it) and add 1/4 cup flax seeds.

I made these cookies this morning & my mum really likes them. I halved the recipe though, 'cause there's only 4 in our family. ^_^
If I make them again I'm going to try using honey instead of sugar, and wholemeal flour.
